100% healthy Pinot Noir grapes were harvested by hand, slightly crushed and spontaneously fermented for 17 days in open vats. Several times during this period the pomace cake was carefully punched down by hand to extract the full range of colorings and flavors. Thereafter, the mash was gently pressed, matures for 17 months in new and used french oak and filled unfiltered in March 2015.
