100% healthy Pinot Noir grapes were harvested by hand, slightly crushed and spontaneously fermented for 16 days in open vats. During this period the pomace cake was carefully punched down several times by hand to extract the full range of colorings and flavors. Thereafter, the mash was gently pressed and the wine was matured for 6 months in new and used french oak. Filled unfiltered in April 2018.
